Why cold-pressed
Unlike most essential oils, which are steam-distilled, citrus oils are typically cold-pressed directly from the peel — a mechanical process that captures the bright, immediate aroma of fresh zest without the heat of distillation altering it. That’s part of why lemon oil smells so close to biting into a fresh lemon peel.
In the kitchen
A drop or two brightens sparkling water, salad dressings, marinades, and baked goods — a fast substitute when you’re out of fresh lemon zest, and useful for recipes where you want lemon flavor without the extra liquid or acidity of juice.
Internal use
