The plant
Mountain savory (Satureja montana) is a small, woody Mediterranean shrub in the mint family, native to rocky, sun-baked hillsides across southern Europe and North Africa. It’s a lesser-known cousin of oregano and thyme, sharing their carvacrol-rich chemistry and much of their culinary punch, though it rarely gets top billing on a spice rack the way its more famous relatives do. The genus name Satureja is sometimes linked, in old herbal lore, to the mythological satyrs — a reflection of how long this plant has been part of Mediterranean folk tradition.
Flavor
Bold, peppery, and warm — very close in character to oregano or thyme, with a slightly sharper bite.
In the kitchen
Mountain Savory Vitality is the dietary-labeled version of the standard oil, distilled for culinary rather than topical or diffuser use. A single drop is enough to season a pot of stew, roasted vegetables, or a hearty sauce; it’s a strong oil, so start with noticeably less than you’d reach for with dried oregano.
Internal use
Like oregano and thyme, mountain savory is considered a “hot” oil because of its carvacrol and thymol content. Follow label directions closely, keep servings short-term rather than continuous, and don’t exceed the recommended amount.
Twin oil
The standard (non-Vitality) Mountain Savory bottle requires heavy dilution before any topical use, since it can irritate skin even at low concentrations — it’s best reserved for the kitchen in its Vitality form rather than for skin or diffuser use.
